Highland Park prides themselves on aging their whisky in sherry casks rather than in bourbon casks (which are predominately used by most Scottish distilleries). Since 1979 they tout their core range staple Highland Park 12 as a monument to that credo. The cherry cask aging imparts a vibrant golden hue to the Highland Park 12. The nose crests with flavors of wildflower honey, citrus and candied orange peel. Spicy sherry, tropical fruit and an underlying smoke, raft smoothly on the palate. The finish is a long balanced wave of pepper and citrus. The Highland park 12 is hard to argue with as an excellent entry-level single malt.
